Kaki’s own natural yeast draws out the natural fermentation power, and the rich nutritional ingredients of Kaki are carefully extracted into vinegar through fermentation over time.

How to make commitment
HALIYO’s Kaki vinegar is made using the traditional vinegar brewing method of “static fermentation”.
It is a time-consuming method in which Kaki is fermented with natural yeast, and acetic acid film is applied only to the surface of the moromi liquid that is exposed to air.
The creators carefully watch over the changes that nature creates every day and grow them patiently.
About what our brand means
Our brand name is derived from the endangered freshwater fish “HALIYO” which is a natural monument that lives in Kaizu, where the brewery is located.
Currently, it can only be seen in a limited area in the southwestern part of Gifu Prefecture.
Together with the people of this land, we are watching over the proper conservation of the endangered HALIYO’s habitat, which is also a symbol of the beautiful nature and water of this land.

A brown, aged vinegar that has fermented and matured for over two years. Because no heat was used during the manufacturing process it contains live enzymes. The fresh aroma of kakis drifts floridly outward, similar to that of fruit wine. Due to its long aging period, this kaki vinegar is characterized by a mellow acidity deep flavor with a long aftertaste.
