A brown, aged vinegar that has fermented and matured for over two years. Because no heat was used during the manufacturing process it contains live enzymes. The fresh aroma of kakis drifts floridly outward, similar to that of kaki fruit wine. Due to its long aging period, this kaki fruit vinegar is characterized by a mellow acidity deep flavor with a long aftertaste.

How to make commitment
HALIYO’s Kaki vinegar is made using the traditional vinegar brewing method of “static fermentation”.
It is a time-consuming method in which Kaki is fermented with natural yeast, and acetic acid film is applied only to the surface of the moromi liquid that is exposed to air.
The creators carefully watch over the changes that nature creates every day and grow them patiently.
