A fruit kaki vinegar that has ripened and fermented for a long period of time in sherry barrels that were used to make sherry by a brewery in the Jerez area in the region of Andalusia in southern Spain. It is a product in which the slightly citrus-like aroma sherry is in balance with the fragrance of fruit kaki vinegar.
