Kaki fruit vinegar is aged for over two years in barrels of rare botrytised wine produced in the Sauternes region of France.
It is a very rare Kaki vinegar that has a unique scent of noble rot grapes that has soaked into the barrel and gives you a sweet harmony in the sourness.
Add to vanilla or chocolate ice cream for extravagant ice cream, or drizzle over dried fruit, uncured ham, or cheese to accompany wine.
How to make commitment
HALIYO’s Kaki vinegar is made using the traditional vinegar brewing method of “static fermentation”.
It is a time-consuming method in which Kaki is fermented with natural yeast, and acetic acid film is applied only to the surface of the moromi liquid that is exposed to air.
The creators carefully watch over the changes that nature creates every day and grow them patiently.
